Japanese amberjack, known as Buri in Japan, is hailed as the “King of Winter Flavors.” It’s a high-grade white-fleshed fish in Japanese cuisine, an indispensable auspicious fish for New Year’s dishes, weddings, and other celebratory occasions. The flesh is milky white with a slight pink tinge, while the bloodline (the darker flesh near the spine) is bright red. Amberjack is rich in oil, with a tender and smooth texture, offering a melt-in-your-mouth sensation similar to Wagyu beef, with a rich yet sweet flavor. The “sweetness” of amberjack comes from its abundant free amino acids, releasing a subtle milky aroma and a sweet, oily taste upon tasting. Although rich in oil, its fish oil is rich in unsaturated fatty acids (DHA, EPA), resulting in a rich yet not greasy flavor with a unique, refreshing finish.
